Roasted Garlic Potatoes

My "Cookie" Friends know how to cook!  Love these potatoes!  If you like garlic you will love these.  I have also used fingerling potatoes in making this dish!  Incredible!!!

Roasted Garlic Potatoes

Yield: 4 servings (3/4 cup each)

INGREDIENTS:

1 3/4 lbs. baking potatoes, peeled and cut into 1” cubes
3 tbsp fresh lemon juice
1 tsp. olive oil
½ tsp kosher salt
4 garlic cloves, minced
cooking spray

INSTRUCTIONS:


1. Preheat oven to 425 degrees.
2. Combine first 5 ingredients in a medium bowl; toss well to coat. Let stand 10 mins. Spoon potatoes into an 11 x 7” baking dish coated with cooking spray. Bake at 425 degrees for 35 minutes or until tender and lightly browned, stirring occasionally.
