This is the best Pecan Pie for just 8 HU's. I made this and took it to my Weight Watcher meeting. We have about 80 people in our class and everyone raved about it. I urge you to try it! You will not be disappointed. I promise!
HU's: 8
Servings: 8
Ingredients:
1/2 Cup Karo Lite Syrup (33% Few Calories) Bottle is Dark Aqua not Pink!!!
1/2 Cup Karo Dark Syrup
1 Cup Splenda Granulated (measures like sugar) NOT SPLENDA FOR BAKING!
1 egg
2/3 Cup egg substitute
2 Tablespoons melted butter
1 teaspoon vanilla
1 Cup pecan halves
1 Great Value Deep Dish Pie Crust (Wal-Mart's Brand)**
Instructions:
Preheat oven to 350 degrees.
In a large bowl stir Karo, eggs, sugar, melted butter and vanilla until well blended. Stir in pecans. Pour into prepared pie crust.
Bake 50-55 minutes or until knife inserted halfway between the center and edge of the pie comes out clean. Cool on wire rack.
NOTE: Karo Representative told me that using the New Lite Syrup may cause you to have to cook the pie longer. She said to cover the pie once it got brown but cook it till the knife comes clean.
** If for some reason you can't get the Great Value Pie Crust, subtract 2 points and calculate the pie crust you use per serving. Add that point value back in. I have found that Mrs. Smith Deep Dish Pie Crust and Pillsbury Ready Crust to be 3 points per serving.
