Jillybean's Taco Pasta Skillet

We never add extra ground beef.  Eight ounces is plenty in this dish..  The corn and black beans make up for it!  I keep the ingredients on hand for a easy quick meal with a salad.  YUM!

Ingredients:

8 oz (you can use more, just count the points) very lean ground beef or ground turkey breast
1 pkg taco seasoning
1 can corn
1 can black beans
1 cup salsa
2.5 cups water
8 oz mini-penne
4 oz ff cream cheese
4 oz 50% less fat pepper jack cheese  (I use 4 oz of Kraft Pepper Jack 2% Cheese slices)

Brown meat. Drain. Add taco seasoning, corn, beans, salsa, pasta and water. Simmer ~15 minutes until pasta is cooked. Add cheeses and stir till melted.
