Green Chile Chicken

If you want to impress your family and/or company you must try this recipe.  It is outstanding!!!!  It is so easy.  It will smell the house up with yummy aromas and you will count down the time till dinner!  PROMISE!  I was brave and first time out served it to a dinner guest and all he could do is go on and on and on...

I found this recipe in Weight Watcher's In Good Time 123 Slow Cooker Recipes To Come Home To.  Note the little changes that I made.  Enjoy!

Cooking Spray
6 - 4 ounce skinless/boneless chicken breast halves
1 1/2 cups chopped onions
1 - 10-3/4 ounce canned condensed reduce-fat reduced-sodium cream of chicken soup (undiluted)
1 - 4.5 ounce canned green chiles undrained.  (I could not find 4.5 ounce can of green chiles so I used the 4 ounce can size but I did use the hot ones.  If you don't like heat use the mild green chiles)
1 Tablespoon vegetable oil
1 cup uncooked long-grain rice
2 cups water
1 teaspoon salt

Coat non-stick skillet with cooking spray.  Place over medium-high heat until hot.  Add chicken and cook 3 minutes on each side or until browned.  Remove chicken from skillet set aside.  Recoat skillet with cooking spray, add onion, saute till tender.  Place chicken into 4-5 quart slow-cooker.  (I used the Crock-Pot liners)  Combine onion, soup and chiles and stir well.  Pour over chicken.  Cover with lid.  Cook on high heat setting for 1 hour.  Reduce to low heat setting and cook 6 hours.

Heat oil in medium saucepan over medium-high heat.  Add rice saute 2 minutes or until rice is lightly browned.  Gradually add water and salt and bring to a boil.  Cover and reduce heat and simmer 20 minutes or until liquid is absorbed and rice is tender.

Serve chicken and sauce over rice.

(Serving size 1 chicken breast, 1/3 cup sauce and 1/2 cup rice)
