Creamy Parmesan Orzo

My Comments:  This is a wonderful side dish to serve with any type of chicken, fish or beef meal.  Everyone raves over it.  Orzo is a rice shaped pasta.  It is very tasty!

1 tablespoon butter
1 Cup Orzo
1 1/4 Cup fat-free, low-sodium chicken broth
1 1/4 Cup water
1/4 C (1 oz.) grated fresh parmesan
2 tablespoons chopped fresh basil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 teaspoons pine nuts, roasted

Heat butter in a medium saucepan over medium heatl.  Add orzo, and cook 3 minutes, stirring constantly.  Stir in broth and water, bring to a boil.  Reduce heat and simmer until liquid is absorbed and orzo is done (about 15 minutes).  Remove from ehat, stir in cheese, basil, salt and papper.  Sprinkle with pine nuts.  Serve immediately.  Yield 4 servings (serving size - 1/2 Cup).
