My Final Weight Loss Journey

Continuing the Journey in 2010

Black Bean Hummus

I have a funny story about this one.  I took it to a family reunion two years agao when I had lost nearly 100 lbs.  My relatives love the things that I normally bring to these events but they are usually loaded with fats and calories.  My Aunt Peggy greeted me anxiously asking me what I brought.  I told her a WW recipe which she then made a face and said "Yuck, I was hoping that you brought something good!"  I told her you need to try this before you say yuck.  The table was spread with all kinds of snacks and goodies to munch on before lunch.  This was the first dish cleaned out!  It cracked me up!  We love this and I love to have it around to also dip raw veggies in.

Notes: I used the juice of ½ of a lemon, but I think it needs a little more lemon juice. Next time, I plan to use the juice of a whole lemon. I served this with baked tortilla chips and raw veggies.

1 can black beans, drained and rinsed
1 large garlic clove
2 to 3 T fresh lemon juice (1/2 lemon)
2 T olive oil
3 T tahini (sesame paste)
½ t cumin
½ to 1 t salt

Drain beans and puree along with the garlic in a food processor or blender. Add the lemon juice, olive oil, tahini, cumin, and salt. Blend until smooth.
