This is a great soup. I like it tons better than the Weight Watcher Soup that is in the Week 1 book. This has an Italian twist to it. I can see where you can add different veggies to it as well. Remember if you consume more than 4 cups of this sup within the day the 5th cup makes it 1 point. Great way to get your veggies in.

Ingredients:10 ounces baby spinach leaves
2 medium carrots, chopped
2 medium celery ribs, chopped
1 large onion, chopped
1 medium garlic clove chopped (I use about 5)
4 cups vegetable broth (I used chicken the 2nd time and I like it better)
28 ounce diced tomatoes (I prefer crushed tomatoes)
2 bay leaves
1 Tablespoon dried basil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes, crushed
Place all ingredients in a slow cooker, cover and cook on high for 5 hours. Remove bay leaves, stir and serve. Yields about 1 cup per serving.
